How to Make Olive Oil

There are many ways to make olive oil, but by far the best way is to cold press olives. This first batch is the most flavorful and in my opinion better for you than the other varieties.

Making Extra Virgin Olive Oil in the Mediterranean

This video illustrates the cold press method of making extra virgin olive oil, by far the best grade and the best taste.  This family uses the ancient but very useful method of grinding the olives into a mash using grinding stones (See the video about a quarter of the way in where it shows two grinding stone wheels). After the olive mash is ground up it is spread on thing round pressure plates and stacked in the cold press. Then the olives are squeezed under pressure to press out the olive oil. This produces the best grade called cold pressed extra virgin olive oil.

kelly Choi from That's So New York shows us how they use tractors to shake the olive trees and make oil with a little more high tech equipment at the family run Galantino plant. Since the olives usually come off the tree with some leaves the special machinery washes them and separates the olive leaves from the olives. Then they use three grindstones to grind the olives and their pits into the mash.
