Preparation time is less than 30 minutes while the flavor release time is at minimum three weeks before use.
Ingredients for three cups of lemon flavored oil (fits nicely into a clean sterilized wine bottle):
Zest from 2 1/2 lemons
20 small branches or sprigs of thyme
2 1/2 cloves of garlic
3 cups of extra virgin or virgin olive oil
Directions:
Place the lemon zest into the bottle, add the thyme, then peel and halve or quartered the garlic and add it too. Finally pour the oil into the wine bottle and cork it. I find you can use those reseal able vacuum corks and they work really well for sealing the bottles.
Tip: use a clear wine bottle so you can see the decorative spices.
This recipe is for making a small quantity, just enough for a meal or two.
1/2 of a cup of your favorite extra virgin or virgin oil
5 cloves of garlic
some balsamic Vinegar
Dried red pepper flakes
Salt
Black Pepper (freshly ground)
Parmesan or Romano cheese
Freshly baked Italian or French bread
First crush the garlic with a garlic press into a small pan and add your favorite oil. Heat the pan on Medium heat (careful not to heat the oil too much) for three to six minutes being watchful not to burn the garlic. Remove from heat and let cool for about an hour, then pour into a sterilized bottle or jar. You can strain it or leave the crushed garlic for texture and additional flavor.
When ready to serve pour a little balsamic vinegar into a decorative dish, pour the flavored oil overtop, then sprinkle with some red pepper flakes, salt and fresh ground pepper. Finally grates some parmesan or Romano cheese over top and serve. Great for dipping hot fresh bread into.
